If you are more of a bake something for mum kinda person then this Spiced Pear Cake might be all you need.

INGREDIENTS:
4 medium ripe pears – peeled & cut into chunks
3/4 cup raw sugar
3 large eggs
1 1/4 cup plain flour, sifted
1 tsp baking powder
1/4 cup cornflour
1 tablespoon ground ginger
1 tsp cinnamon
1 pinch sea salt
½ tsp vanilla extract
100g butter (melted)

METHOD:
Pre-heat the oven to 180°C. Cream the eggs and sugar until light and fluffy. Sift the flour, cornflour, salt, ginger, cinnamon and baking powder together. Add the flour mix to the eggs and sugar and fold in, add the melted butter and vanilla and fold again. Lastly tip in all of the chopped up pear and juices and again fold until mixed through. Line a 24 cm cake pan with parchment paper, pour in the batter. Bake for 40 minutes or until skewer comes out clean. Leave to cool before serving. Lovely with cream!
